I have a confession to make. I’ve never had a pumpkin space latte. There, I said it! I’m not a coffee drinker, so they’ve never appealed to me. I do, however, love pumpkin and am always looking for new pumpkin treats I can make. If it satisfies my sweet tooth, AND is tasty and healthy, it’s a big win for me. So when my friend Chandler (Spokane Eats) shared Method Juice Cafe’s recipe for “cookie dough” made with BEANS, I was inspired to experiment with some recipes of my own. And with some trial and error, Pumpkin Spice “Cookie Dough” Bites were born.

Your first glance at my recipe probably won’t prompt you to think these bites will be a nice treat, but I’m here to tell you they’re tasty and nutritious, entirely plant based, and a nice source of protein and fiber. I hope you’ll give them a try.

Nutritious Pumpkin Spice “Cookie Dough” Bites

  • 1 cup Gluten Free Oats
  • 1 15.5 ounce can Cannellini Beans, drained and rinsed
  • 1/2 cup Canned Pumpkin Puree
  • 3 Tbsp. Maple Syrup
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Ground Cloves
  • 1/4 teaspoon Ground Ginger
  • 1/4 teaspoon Salt

Process oats in a food processor until finely ground. Add remaining ingredients and process until smooth. Form the “bites” by scooping the dough with a small cookie dough scoop and then rolling in your hands. Or simply eat with a spoon.

Store in the refrigerator.

To make the bites super cute, shape them into little pumpkins by simply using a butter knife to make vertical lines around the sides, pushing down the center with your finger, and topping with a chocolate chunk or chocolate chip. Enjoy!

IT'S ME, SERENA!

I bounced through the first years of my life in a hippie gypsy wagon, hand-built by my father, wandering the back roads of the U.S., Canada and Mexico. My family eventually settled into a tiny cabin in the woods on property that was once inhabited by Native American Indians.

I spent my childhood days searching for arrowheads, teaching myself to sew on a treadle sewing machine and to bake in a wood-burning stove, with no running water, refrigeration, or electricity in our home. My family lived frugally and early on, inspired by my parent’s thriftiness and style, I gained a knack for thrifty creativity and turning ordinary objects into something useful. And I dreamed of the home I would create for my own family someday.

Now I’m married to my husband, Colin, and our children are all grown. After 24 years of producing The Farm Chicks Vintage & Handmade Fair, I'm spending time visiting other markets around the world. You can watch episodes of Serena Goes to Market here.

I share more about my life story from time to time, here on my blog. You can also find me on Instagram, and Facebook.
